Chuck Brummel

I started attending the class at the request of my wife and immediately started loosing weight.  Within 60 days I had dropped to 165 pounds from 193 pounds.  I had seen my Family Care Physician, Dr. John Powell from Evergreen Clinic just before starting on the whole-food plant-based lifestyle.  Ninety days later I had another blood test, and Dr. Powell suggested that I cut my cholesterol and blood pressure medication in half. Within ninety more days, he suggested that I drop the medication entirely, and check back in thirty days.  My cholesterol had dropped from 242 to 178, and my blood pressure was now 121/73.  Almost two years later, my cholesterol is 182 and my blood pressure is still in 120/70 range, totally un-medicated.

The most shocking thing to me was that I had sleep-apnea and was wearing a c-pap mask, and had been doing so for about 20 years. My specialist doctor, who practices in Bend, Oregon, had given me a long term prognosis, that I had sleep apnea, and would likely have sleep apnea the rest of my life. Dr Powell informed me that I no longer had sleep apnea after about one year after my THIP-inspired lifestyle change.

Has THIP had an impact on your life?

I find it quite amazing.  My vegan daughter always told me how she gained energy, lost all cravings for foods she’d previously felt she couldn’t live without.  I had my doubts, believe me, but it’s true!!I think my body needs a plant based diet!.  I’m doing so well!

Have you experienced any health improvement?

Lost wt, about 9 or 10 lb, feel great.  The best part is not craving or even wanting unhealthy food.(The just weighed me and say I only lost 7 lb but I think that’s my clothes I’m wearing.  Think I took my shoes off last time!  I’m almost down to what it says on my drivers license.

What would you like others to know about THIP?

Give it a chance!  I never listened until I tried, thanks to THIP.  Before attending classes I only thought about what I’d have to give up (eggs, chees, oils, etc.) Now I think how I’ve gained the freedom from cravings and insatiable, mindless eating.

How have you changed since starting THIP?

Sure makes one think before eating anything.  Before THIP, I had to have a bite of everything.  I’ve become extremely selective, happily so.

My friend told me that she went through this program and that it can cure diabetes. I told her that she’s a liar. I was taking minimum 5 shots of insulin/day. I had been told by the medical professionals in this county that you cannot cure diabetes since my diagnosis in 1999. I started at 10 units and was up to 120 units/day. I asked my doctor about  this program and she said I should try it. I didn’t believe any of these people, the facilitators, the volunteers, my friend or my doctor that this program could help me. The proof was in the blood test. My BUN went down 5 points, my GFR which was down to 43% went up to 51%, my LDL cholesterol went from 167 to 120 in eight weeks, triglycerides went from 238 to 88, HDL went up from 41 to 52, my A1c went from 6.1 to 5.4, as a result, my doctor has lowered my insulin intake twice. My CRP (inflammation level) was at 11.7 (it’s supposed to be under 3) and dropped to 4.19. When I was diagnosed I was never told that I could reverse disease by living a healthy lifestyle.

As a person with no phone, no email, and no computer, I never would have heard about it if it weren’t for my friend Shannon so I am so grateful that I did. I hope UC-VEG can continue to improve lives for a long time with this program.

Give it a try!  You will learn a lotl

How have you changed since starting THIP?

I’ve learned more about what fatty animal products do in our systems.  I lost weight!  My energy, sleeping patterns, the way I feel has not changed appreciably.  Our diet changed moderately:  almost no dairy, almost no meat.  And more of our usual fresh veggies, whole grains and legumes, lots of beans and rice, corn tortillas.  From mid-may thru oct, we have always lived off the garden, we have collards, kale, turnip greens, mustard, wild greens etc year around.  So it was a moderate change.

Has THIP had an impact on your life?

When I started, I had worries, I had recently been diagnosed with chronic kidney disease and was told by my doctor to start dialysis. I really did not want to do that because I saw what it did to my uncle.  When I started, my thoughts were, “This is just another diet that will fail.”  Boy was I ever wrong.  This is a wonderful group of people teaching a new lifestyle, a healthier lifestyle.  These people have made a huge impact on my life, I thank every one of them.

Have you experienced any health improvement?

As I stated, I have chronic kidney disease.  When I started the class, my GFR was 29 and still going down.  You offered to take a blood draw, that first draw changed my life and my mind about THIP, my GFR went up to 44 just during the 12 weeks! My cholesterol plummeted, my heart disease leveled out.  As I see it, these people saved my life.

My doctor sent me to this class:. I wasn't completely convinced but, I went to the class thinking I may gain some knowledge.  I listened and learned and this class changed everything I believed about food and about our health issues.  We are making ourselves sick with what we are consuming.  It's the best thing I've ever done for myself.

Knowledge is power.  I'm elated to finally hear the truth about food!  Changing my eating habits has given me a new lease on life.   I have lost weight, I feel better and I sleep much better and have increased my energy.   I'm excited for what the future holds.  My long term goal is to continue to lose weight and stop all medications.

Do yourself a favor and listen and learn and hear the truth about health and nutrition.  I know this is the way to live a long and healthy life.  This is 12 weeks that can change your life.

The people that teach the class are wonderful, caring, giving people!  I admire them for sharing their knowledge and giving their time.  It's very important information and really the best gift they can give us!

Thank you for your time and the gift of knowledge!

In June, 2016, my husband was interested in going to the THIP class about the time he was diagnosed with gall stones and scheduled for surgery in July. We were both referred by our doctor and started going in June, then continued when session restarted in July. My husband had his surgery July 22, and we really started watching fat and animal protein and walking together after that date. He has been excited to go to potlucks and try new recipes. He has lost 30+ pounds since July.

With metformin for my diabetes, I had been taking fiber supplement and meeting 25-30g/day fiber goal with my food. But after THIP, I did math and calculated that I already was taking 50g soluble fiber with the supplement alone!  So I already am getting 75-80g of fiber per day so I can live and work with the metformin outside of the bathroom. Increasing fiber beyond that is sort of a problem until I can cut back on supplement or metformin.

Cutting the fat/animal products is what is taking off the weight. We are just leaving olive oil out of our usual recipes and they taste just as good. And I replicated veggie fajitas ala Los Dos Amigos (with only 1 T olive oil for about ¾ gallon of veggie filling and no alcohol). In fact my husband has asked me a couple times if I added oil to recipes because we can’t tell the difference in texture or rich flavor.

I am not plant perfect and Marc is more perfect than I am. But I really have cut back on all animal products. I gave myself a year to become plant perfect, or close to. I’m not sure that I will need a full year now, but as Marc says, “We’re not rigid.”
